THE CHALLENGE: bringing Industry 4.0 to a craft business
Alberto and Cristian, long-time friends, founded Pane Forno Italiano with the goal of spreading traditional Italian bread around the world. Thanks to Alberto’s experience in baking and Cristian’s passion for food, they created recipes that allow bakeries, shops, and hotels to bake authentic, high-quality bread — while preserving the rich Italian tradition.
In recent years, there has been growing interest in artisanal products, with a strong focus on ingredient quality and healthier alternatives to industrial goods. As a result, Alberto and Cristian developed sourdough-based recipes to produce bread that is healthy, digestible, aromatic, and stays soft for several days.
Moreover, they offer a unique customization service: a 100% natural edible wafer printed with the client’s logo — a powerful branding tool that reinforces the identity of the store.
Driven by ambition and a desire to improve, they began optimizing their production processes. Starting in 2020, they digitized 14 machines, fully automating job management and monitoring — and at the same time, benefiting from Italy’s Transizione 4.0 tax incentives.
THE SOLUTION: implementation of miniMES5.0
To support their production needs, Orchestra deployed RETUNER®, a digital solution designed for planning, tracking, monitoring, and analyzing machine operations.
At the heart of the system is miniMES 5.0 a Manufacturing Execution System developed specifically for small and medium-sized enterprises in the food sector. It enables greater efficiency, control, and traceability throughout the entire production process.
